100% Cabernet Franc grapes.
History
It is a vine originating in the Bordeaux region,
and more precisely, the Gironde. It was imported to Friuli at the
end of the 1800s and from that time has become widely cultivated.
Characteristics
Intense red ruby colour tending towards blue,
it has a full and fragrant bouquet with a strong herbaceous intensity.
Its dry tannic full bodied qualities, are enhanced by its ageing
in oak casks, giving elegance to this wine of great character.
Vinification
The grapes were immediately removed from their
cluster then poured into stainless steel vats. These were completely
re-mixed by way of thrice daily manual re-assemblage. The fermentation,
although not controlled mechanically, almost constantly maintained
a temperature of 28°C, ideal for the proper colour and tannin
content. 10 days later the wine was drawn and pressed. After a month’s
ageing in stainless steel vats, the wine was poured into Slavonian
oak casks for 10 months of final ageing.
