History
Originating in the Bordeaux region, it is uncertain
as to when it was imported to Friuli, but it seems to have been
cultivated prior to Cabernet Franc. Whereas more widely diffused
than Cabernet Franc in France, in Friuli it is not extensively cultivated.
Characteristics
Intense red ruby colour tending towards violet,
its full bouquet is lightly herbaceous, with notes of raspberry
and blueberry. A full bodied, dry wine, of medium tannin content,
its ageing in oak casks give it an ethereally perfumed elegance.
Vinification
Upon arrival in the winery the grapes were
immediately separated from the cluster then poured into stainless
steel vats. There were two re-assemblages daily with a complete
re-mixing of the grape skins. The fermentation, although not controlled
mechanically, almost constantly maintained a temperature of 28°C;
ideal for the proper colour and tannin content. After 13 days the
wine was drawn and pressed, then finished in stainless steel vats
for another month, to be ultimately placed in Slavonian oak casks
for 9 months of ageing.
