Grape Variety
100% Chardonnay grapes.
History
Native French vine, wide spread in the Champagne
region, for a long time erroneously identified in Friuli as being
Pinot Bianco, at least until 1978 when it was placed on the national
register. Both sparkling and non-sparkling wines are produced from
this variety.
Characteristics
Yellow colour with golden reflections. Fine,
elegant, noble. Bouquet with notes of apple, crusts of fresh bread.
Copiously inviting taste of apple and acacia flowers.
Vinification
The grapes, gathered at a temperature of 22°C,
upon arrival in the winery were immediately separated, by rotation
and compression, from the cluster, then soft pressed. Must chilled
at 15°. Settling overnight. Pouring of must cleaned with selected
yeast. Fermentation at 18° C for 12 days. Decanting. Ageing
in stainless steel vats.

2.5 hectares at Romans. 4.200 vines per hectare.
