History
A grapevine native to France, it has found
a second home in Friuli.
Characteristics
Intense ruby red colour, with a full, fragrant
bouquet perfumed by raspberry, blackberry, and blueberry notes.
It is dry and pleasantly full-bodied yet well- balanced, and its
herbaceous quality, due to its ageing in oak casks, is justly light
for the nose and palate.
Vinification
Immediately upon arrival in the winery the
grapes are separated from the cluster, then poured into vats. There
were two manual re-assemblages daily with a complete re-mixing of
the grape skins. The fermentation, although not controlled mechanically,
almost constantly maintained a temperature of 28°C, ideal for
the proper colour and tannin content. 14 days later the wine was
drawn and pressed, then left in stainless steel vats, after which
it was transferred into Slavonian oak casks for 8 months of final
ageing.
