Grape Variety
100% Pinot Blanc (Bianco) grapes.
History
Originating in France, this grapevine has been
widely cultivated in Friuli, second in abundance after Tocai. Perhaps
already present in Roman times, this variety is a germinated mutation
of Pinot Noir (Nero).
Characteristics
Colour of yellow straw with green reflections.
Pleasant and elegant bouquet, rich in nuance recalling wildflowers,
artemisia, cherry, apricot and apple. It is our experience that
as it ages, notes of pasture herbs, aromatic leaves, and dried fruit
come forth in Pinot Bianco’s bouquet.
Vinification
The grapes, gathered at a temperature of 25°C,
upon arrival in the winery were immediately separated, by rotation
and compression, from the cluster, then softly pressed. Must chilled
at 15°C. Settling overnight. Pouring of the must cleaned by
inoculation of selected yeast. Fermentation at 18°C for 9 days.
Decanting. Ageing in stainless steel vats.

1,5 hectares at Romàns. 4.200 vines
per hectare.
