100% Pinot Grigio grapes.
History
Grapevine with French origins. A geminated
mutation of Pinot Nero. Friuli’s climatic conditions favour
the success of this variety. It is one of our region’s best
known wines world wide.
Characteristics
It has a distinct, marked bouquet recalling
acacia flowers. Dry, gentle, full, pleasantly bitter in taste, with
a notable aroma of artemisia.
Vinification
The grapes, gathered at a temperature of 26°
C, upon arrival in the winery were immediately separated, by rotation
and compression, from their cluster, then soft pressed immediately
so as to avoid their skins’ loss of colour. Cooling of the
must at 15° C. Settling overnight. Pouring of the must cleaned
by the inoculation of selected yeast. Fermentation at 18° C,
for 10 days. Decanting. Ageing in stainless steel vats.
