History
This is our dear, loved, offended Tocai. The
name of the most acclaimed grape variety produced in Friuli. So
why should we now change its name to “Sovràn”?
Because after the year 2007 the name Tocai can be used exclusively
by the Hungarians. We at Lorenzon have conceived and registered
this name and donated it to E.R.S.A. (Regional Agricultural Development
Authority), to offer it as the first concrete alternative to the
soon to be prohibited commercial use of the name “Tokaj”
(and its derivatives) outside Hungary.
A regal name of great import, easily pronounced by consumers world
wide, distinctly Friulan so as to distinguish its character from
wine of other regions, above all the name Sovràn expresses
the sovereign character of this king of the Friulan vineyards.
Characteristics
Yellow straw colour tending toward green. An
exceptional wine: refined, delicate, with an intense aroma recalling
wildflowers; dry, fresh, soft, velvety, with the distinct taste
of almonds, very round, of medium alcoholic content and acidity.
Vinification
The grapes, gathered at a temperature of 24°C,
were separated, by rotation and compression, from their cluster,
then soft pressed. Chilling of the must at 15°. Settled overnight.
Pouring of the must cleaned by inoculation of selected yeast. Fermentation
at 18°C for 10 days. Decanting. Aged in stainless steel vats.

Two hectares, planted as a part of the “I
Feudi di Romàns” crù in 1992. 4.300 vines per
acre.
